What’s in the Warehouse?
Last year we took a deep dive into some of the cask types currently maturing in our warehouses. Recently, we had an exciting delivery of some new experimental red wine casks, which the team have already begun filling. All of our casks are filled on-site, roughly 30 per week, before moving across to our warehouses to begin maturing.
Lets take a look at what we’ve got!
Sangiovese
An Italian red wine grape, mainly produced in Tuscany. Described as medium-bodied with high tannins, the flavours expected from these casks include red fruits and savoury, earthy notes. We plan to fill half of our Sangiovese casks with new make spirit, whilst others we’ll experiment with by finishing Bourbon-matured stock.
Grenache
A popular red wine grape grown across southern France and Spain. In the case of our Grenache casks, we imported them directly from France. We’ll be looking for spicy, warming flavours of black cherry, star anise and cinnamon from these, and like the Sangiovese casks, we plan to fill some with new make spirit and some with Bourbon-matured stock… Christmas release anyone?

Tempranillo
A black grape variety used to make red wine in Spain. According to BBC Good Food, Tempranillo gets its name from the Spanish word “temprano" meaning early, as this grape ripens a lot faster than other varieties. Similar to Sangiovese and Grenache, half of these casks will be filled with new make, whilst the other half will be used for finishing.
Banyuls
These casks have arrived directly from the South of France, near the Spanish border, and will be the only casks not filled with new make spirit. Instead, we will use these exclusively for finishing. We hope that these casks will give us lovely stewed fruit flavours that will add an extra layer of depth to our whisky.
